Cocktail Hour: Aperol Fizz

Just because other people are having a sober January doesn’t mean you should miss out! We love this classic fizz because it’s light on the alcohol content but packs all the glamour of a champagne based cocktail like a French 75 or Kir Royale. The citrus and egg white balances the herbal bitterness of the Aperol out perfectly, while the twist of grapefruit on top adds an aromatic citrus scent as you take the first sip. This cocktail is super easy to make and is lovely at brunch or as your first drink of the evening.

Ingredients:
2 oz Aperol
1 oz Fresh Lemon Juice
½ oz Simple Syrup
½ oz Egg White
Seltzer Water
Grapefruit peel

Method:
Dry shake Aperol, simple syrup, lemon juice and half an egg white in a cocktail shaker. Add large chunks of ice and shake vigorously for about half a minute. Pour through a fine strainer into a chilled champagne flute. Top mixture gently with seltzer water and garnish with a twist of grapefruit.

Hints:
Use a flute instead of a coupe or wine glass to fancy it up (why? because everything tastes better from a flute).
To control going over a half ounce of egg white, crack your egg into a separate glass, then pour out on ounce white. This will also eliminate any shells or yolks from getting into your cocktail accidentally.
